Add individual user option to turn off read receipts / "seen by"

I see that read receipts can be turned off at an organisation level per the response to the idea linked below, however it would be great if individual users have the option to turn off read receipts or "seen by" and by doing so these users can't see the "seen by" status for their messages and other users aren't informed when they have seen their messages.
